It is a dish born from the land and the ancient wisdom of those who, for centuries, have transformed simple ingredients into rich and nourishing food.
The broad bean purée, smooth and velvety, is made from dried hulled beans slowly cooked until they become creamy. Their naturally sweet and comforting flavour blends perfectly with wild chicory — foraged greens with a bold, slightly bitter taste. This pairing tells the story of the most authentic Apulia: a land shaped by seasonal rhythms, foraging traditions, and deep respect for nature.
Completing the dish is a simple yet essential element: toasted bread. Crisp, golden slices are often drizzled with extra virgin olive oil, which in Apulia is not just a condiment, but a true symbol of identity. The bread adds texture, aroma, and that rustic touch that makes every bite a complete experience.
Served warm, this dish feels like an embrace — a perfect balance of softness and crunch, sweetness and bitterness, memory and place. It is the kind of food made by grandmothers, meant for slow meals and shared moments, with flavours that need no reinvention because they already hold everything that matters.
