Orecchiette with rocket and red cherry tomatoes In Gravina, cuisine speaks through essential ingredients, carefully selected and transformed into flavours that tell the story of the land. Orecchiette with rocket and red cherry tomatoes is one of those dishes that needs no introduction: the aroma of good olive oil, the deep green of the rocket and the bright red of the cherry tomatoes are enough to evoke an entire tradition.
The orecchiette, handmade with patience and ancient gestures, hold the sauce like small shells. The rocket, lightly blanched, retains its bold, slightly bitter character, while the cherry tomatoes, quickly sautéed, bring sweetness and freshness. Gravina extra virgin olive oil binds everything together with its fruity note, and a sprinkle of pecorino completes the dish with a savoury touch.
