Stale bread, the true protagonist, is revived by the cooking water of the vegetables, absorbing their aromas and nutrients. Potatoes bring creaminess, turnip greens add their bold, slightly bitter character, while the egg – often poached or left to set directly in the broth – adds a soft and enveloping note.
