Swordfish carpaccio was created from this very intimacy with the sea. Fine slices of swordfish, cut like veils, lie on the plate with the delicacy of a summer breeze. Their transparency shows the quality of the catch, the care taken when cutting, the simplicity that becomes art.
A drizzle of extra virgin olive oil from Apulia – green, fragrant, distinctive – caresses the fish and enhances its natural sweetness. A few drops of lemon juice add a bright note, while chopped parsley adds a herbaceous touch reminiscent of the Mediterranean scrub. Occasionally capers, pink peppercorns or thin flakes of sea salt are added, but always with measure, because the heart of the dish is always the swordfish, in its purity.
